There have been changes in artemia farming pattern  in Vinh Chau from 1989. Currently, the farming patterns with 2-cycles monoculture and integration of artemia and salt are dominant. Advantages of artemia business and production are as follows: high quality, getting some traditional markets, cheap labor rent, farmers? high experience in production, suitable natural condition for artemia production, high demand for artemia product, and technological supports from Can Tho university and Research institutes No II. However, this industry also has some disadvantages, such as  weak trading promotion, high production cost, lack of economic connection between producers and domestic investors, farmers having not enough working capital for production, high competition of imported artemia products,worse weather, unstable price of artemia.

Ratio of fruit-set in mango is very low as ability of pollen pollination in stigma  is difficult even in synthetic medium condition. To improve yield of ?Cat Hoa Loc? mango, an experiment was carried out on 5-year-old trees in Song Hau Farm, Co Do district, Can Tho city, which was designed in randomly complete blocks with 4 treatments. They are: 0, 1, 2, 3 g borax/l. Borax was sprayed on leaves at stage of inflorescence 10 cm in length. The results showed that foliar application of borax at concentration of 2 g/l could increase ratio of fruit-set, yield, dry matter, and total sugar content of fruits compared with control treatment.

Dragon fruits were harvested at 28 to 30 days after blooming. Then, the fruits were coated with chitosan film 1,5% (w/v) combining with perforated LDPE packaging.  Preservation was maintained at low temperatures: 2-4oC, 6-8oC and 10-12oC and Relative humidity at 50-60% .   Before being coated, the fruits had been treated with chlorine and benomyl solution at 100 ppm and 500ppm, respectively.  The results showed that the perceptible value of fruit changed very little at 6-8oC. After six-weeks of storage, temperature is the most important factor controlling the quality of fruit.  If the temperature was increased, the quality and the preservation time would decrease.  Low temperature at 6-8oC combining with coating fruits with chitosan film and packaging in perforated LDPE  can constantly preserve fruit in 6 weeks without changing quality.

The objective of this research was to determine the good conditions for cabbage fermentation (sauerkraut) process to make a delicious product.  This result can be applied in the small and middle scale production. The research has found that: the suitable brine concentration of 2,0-2,5% at 18oC (small size leaf, 9-10 days) and 30oC (big size leaf, 6-7 days); acid lactic content 10,6-12,7% gave good taste product Lactobacillus sp. population is 7-8 (log MPN/ml).  In order to shorten fermenting time and improve quality of pickled cabbage, product of lactic bacterium was added into fermented medium.  The fermenting time shortened one or two days (0,1% fresh cabbage) but this may cause higher cost while the taste of cabbage pickle is not improved considerably.

In the Mekongdelta, the growth and yield of He - Thu rice crop have usually shown that it was no benefit to compare with Dong - Xuan rice crop. One of the reasons to less rice yield is rice soil problems. This paper investigated density of soil bacteria, fungi and actinomycete and some of soil chemical characteristics as NH4+, Fe2+, pH and EC in two pre-soil He - Thu and Dong - Xuan rice productions. After 4 weeks rice sowing, the results indicated that the increasing in soil bacteria and actinomycete densities of pre-soil He - Thu rice production and concentration of available Fe2+ was 0,78 mg/l higher than pre-soil Dong - Xuan rice production; otherwise, pre-soil Dong - Xuan rice production had low microorganism activities and more high pH value by 0,51 unit than pre-soil He - Thu rice production.

An experiment was carried out at the cattle farm of AFIEX Company, An Giang province, on 30 Sindhi*Local crossed steers, initial body weight of 100-120 kg, reared during 240 days. The animals were alloted into a complete randomized design of 5 treatments with 6 replications. The treatments were concentrates of different protein ingredients: 45% fish meal (50% CP), 32% fish meal, 43% copra meal cum 2.5% fish meal, 99% copra meal and the regular contrate of the farm. Roughage ingredients for all treatments were rice straw, urea-treated rice straw, fresh tapioca waste and fresh grass. Rusults: animals on diets with 43% copra meal cum 2.5% fish meal had the liveweight at 17 months of age of 240,70 kg, and the best average daily weight gain of 493.5 g , concentrate:gain ratio (dry matter basis) of 7.97, followed by those with 45% fish meal and those with 32% fish meal, having the corresponding data of  202,40 kg, 410g, 9.52.

The objective of this project is to improve yield about 10% -15% of traditional ?Nu Xanh? maize variety at Tan Thanh village, Lai Vung district, Dong Thap province. By applying ear to row metho.From season Winter ? Spring of 2003-2004 to crop spring- summer 2005, a local maize ?Nu xanh? was cultivated at Tan Thanh village, Lai Vung district, Dong Thap province. Results on testing experiment showed that  maize yield of  ?Nù Xanh? improving variety was 4,45 ton/ha, higher than the original control 16,79%. Carry out 2 demonstrations an improved 'Nu Xanh' variety at Vinh Thoi and Hoa Thanh villages, Lai Vung district , Dong Thap province. We were completed the protocol of cultivation and seed propagation, besides of this, we also trained 42 farmers and staffs of Dong Thap province. In addition, we had to hold a workshop how to make an improved variety, 50 farmers and staffs of Dong Thap were participated.

The aim of this research is to study appropriate conditions for hydrolyzing proteins in soybean meal by using crude enzim extract from papaya latex. The obtained protein hydrolysate with high nutritional quality can be applied in husbandry.  The results showed that crude papain extract has strong activites towards soybean meal at optimum conditions pH 7.0 and temperature55oC.  There was almost no difference between the two experiments with or without interaction of these two parameters.  Yielding effect was maximun at 11.8%  coresponding with the ratio of enzim:substrate  0.75:100(w/w),  enzim specific activity 91.12TU/m and time course 24 hours .  SDS-PAGE analysis revealed that soybean meal contained proteins in a range from 14,4-80kDa. These proteins were diminished during the course of hydrolysis, and after 24 hours the remaining proteins of the hydrolysate, except amino acids, composed of  fractions of about 14.4-25.0 kDa.

The high quality rice varieties are the important demand for rice breeding and selection in theMekongDelta.  Total of 104 crosses and 8640 lines were bred and selected in 2004-2006 period in Mekong Delta Research Development Institute.  Ratio of MTL varieties originated from domestic rice lines was 89%.  The crosses L263, L264, L274, L280, L318 and L342 showed dominant hybrid.  Our rice breeding and selection program had released some promising rice varieties for rice production such as: MTL297, MTL314 (tolerant to acid sulfate soil), MTL364, MTL372, MTL392, MTL422 and MTL512 (good quality), MTL325, MTL352, MTL332, MTL416 and MTL511. Rice selection based on IRRI genealogy method with support from biotechnology will be a bright way in the future.

A study was carried out at the experimental animal husbandry farm  in Can Tho University form October 2005 to March  2006.   Water sampling was taken at the high and low tidal in the wet season and dry season.  The results showed that water environment of the experimental farm is severely polluted.  The average organic amount (COD), hydrogen sulfide, N-NH4+ and total Coliform were 878.9 mg/L, 32 mg/L, 70.4 mg/L and 2.78*105 MPN/100 mL respectively.  The water parameters such as: COD, N-NH4+ and total Coliform are drastically over Vietnamese Standard for surface water quality at the surrounding water environment.   The amount of organic matter in this study was higher 3.5 times than in 2000.  Husbandry activities could be the considerable pollution source that affected surface water quality in  adjacent canals and rivers.

The effects of NaCl concentrations of soaking solution (8-12%) and soaking time levels (30-70 minutes) on final moisture content, NaCl concentration, and organoleptic characteristics of smoked catfish (Pangasius Hypophthalmus) fillets were investigated.  When soaking raw catfish fillets in 10% NaCl solution for 50 minutes, the products showed better sensorial characteristics. The salted fillets were pre-dried at temperature of 45-50oC for 3 hours then smoked at the same temperatures for 50 minutes.  After being smoked, the smoked fillets were cooked by drying at temperatures ranging from 70 to 80oC  for total time of 9 hours. Shelf-lifes of 6 and 14 days were found for the products vacuum-packed in PE bags stored at ambient temperatures and between 10 and 15oC, respectively.  In conclusion, NaCl concentration of soaking solution, soaking time level, smoking time level, and drying conditions show significant effects on quality of smoked catfish fillets, while storage temperature is important in maintaining the product quality.

Sap burn is injury on mango peel contacting with sap?s mango. These things effect on fruit quality and reduce commercial value. An experiment was carried out to reduce the effect of sap burn on fruit peel by the factorial randomized complete design with 21 treatments that are combine of two factors: factor A (treatment time: 0, 1 and 4 hours after harvest), and factor B (treatment: control, water, LS 0.1% + CMC 1%, Tween-80 1% + CMC 1%, CMC 1%, detergent Omo 0.04%, DC Tron Plus oil 200 ml/l). The results showed that the treatments that were applied immediately after harvesting gave best results. Water treatment or detergent Omo 0.04% treatment at 1 hour after harvest gave the best results to reduce sap burn incidence of Cat Hoa Loc cultivars. CMC 1% treatment at 4 hours after harvesting gave the best results to reduce sap burn incidence of Cat Hoa Loc cultivar.

In this study, the quality of fermented cocoa beans in natural conditions, the main microbial population and biochemical changes during cocoa bean fermentation were carried out. The results showed that cocoa beans reached accepted quality in natural fermentation but the quality was not the same in all heaps of cocoa beans and completely depended on the weather conditions. This is the continous activities of groups of microorganisms: At first, the development of yeast; then, the bacteria; finally, some filamentous fungi may appear on the surface. The optimum parameters of fermentation for the best cocoa bean quality are the temperature at 40 oC, the moisture content of fresh cocoa beans about 82% and the  fermentation process during  7 days.

Orange ?Tam Binh? has high nutritional and economical values.  So, extend shelf-life of fresh oranges and reduce post-harvest losses are in great demands.  Applying suitable post-harvest technology to reduce losses is necessary. Orange ?Tam Binh? can preserved in 10 weeks at low temperature (4-6oC, RHằ50 %) in  the perforated LDPE bags (25.10-2 x 35.10-2 x 4.10-6m) with hole size 4mm and percent open area of 0,3%. The appearance and eating quality of the preserved samples were quite good as  compared with the fresh oranges. The weight loss after 10 weeks of preservation was  7,16% .

Clearner production opportunities in Viethai seafood processing factory which were defined rely  on the cleaner production methodologyhesis (include 6 steps) were thirteen opportunities could immediate implement and three could implement in the future.  In the experiment of cleaner production solution application at washing product step, shrimp washed in chlorine water with different concentrations as 0ppm, 10ppm, 20ppm, 50ppm, 100ppm and sampled to test microbiological criteria. Samples of shrimp were washed with 20ppm and 100ppm concentrations reach standard of microbiology and insignificant difference.  In order to reach efficiency in economy and protection environment, author chosed 20ppm concentration to replace 100ppm concentration.  The experiment at washing tool step by installation pressure water tape and basting ? waste grille also showed efficiency in economy and protection environment.

Tweenty bacterial isolates were isolated from diseased fish and shellfish together with 3 reference strains were examined phenotypically by biochemical characters and genotypically by ribotyping. Comparision based on 45 phenotypic characters by Euclidean distance with unweighted average linkage clustering (UPGMA) showed that these isolates mainly clustered in two groups. One group which consists of 14 isolates was equated with Aeromonas hydrophila. The remaining group comprising six isolates, did not establish any relationship with the included reference strains. Strains were also subjected to rRNA gene restriction pattern analysis (ribotyping), using SmaI as restriction enzyme. Twelve ribotypes were detected among studied isolates. Matrices of similarity coefficients between all possible pairs of strains were calculated and clustered according to the UPGMA as well. Similarity of ribotyping patterns between strains supported the phenotypic identification and performed its usefulness for the investigation of epidermiological relationship between studied strains.

Rusults were that animals on diets with 43% copra meal cum 2.5% fish meal had the best average daily weight gain of 493.5 g , concentrate:gain ratio (dry matter basis) of 7.97 and carcass dress-out of 52.77%, followed by those with 45% fish meal having the corresponding data of 410g, 9.52, 50.05%.

In order to screen genetic purity and increase hight quality of a new variety, collected in the Mekong Delta from 2001-2005 was analyzed by protein SDS-PAGE at lab of genetics-breeding & applied biotechnology, college of Agriculture, Cantho university. Results from protein SDS-PAGE electrophoresis and field tests show that elite  lines  was genetic purity with high stable protein content (>10%), amylose content was lower 2% and 3 elite lines  was genetic purity with high stable protein content (>10%), amylose content was lower 20%, yield was also higher than the control variety (>15%) while agronomic characteristics such as plant height, 1000 seed weight and others weren?t different significantly. These two high quality lines were suggested to release into seed production in MekongDelta.
