Abstract

Clearner production opportunities in Viethai seafood processing factory which were defined rely  on the cleaner production methodologyhesis (include 6 steps) were thirteen opportunities could immediate implement and three could implement in the future.  In the experiment of cleaner production solution application at washing product step, shrimp washed in chlorine water with different concentrations as 0ppm, 10ppm, 20ppm, 50ppm, 100ppm and sampled to test microbiological criteria. Samples of shrimp were washed with 20ppm and 100ppm concentrations reach standard of microbiology and insignificant difference.  In order to reach efficiency in economy and protection environment, author chosed 20ppm concentration to replace 100ppm concentration.  The experiment at washing tool step by installation pressure water tape and basting ? waste grille also showed efficiency in economy and protection environment.

Các cơ hội sản xuất sạch hơn tại nhà máy chế biến hải sản Việt Hải được xác định dựa trên phương pháp luận sản xuất sạch hơn (gồm 6 bước) là 13 giải pháp có thể tiến hành thực hiện trước và 3 giải pháp thực hiện trong tương lai.  Trong thí nghiệm áp dụng giải pháp sản xuất sạch hơn tại khâu rửa nguyên liệu, tôm được rửa trong nước chlorin có những nồng độ  khác nhau là 0ppm, 10ppm, 20ppm, 50ppm, 100ppm và sau đó kiểm tra các chỉ tiêu vi sinh vật.  Các mẫu tôm được rửa ở nồng độ 20ppm và 100ppm đều có số lượng vi sinh vật đạt tiêu chuẩn và khác biệt nhau không có ý nghĩa.  Vì vậy để đạt hiệu quả về kinh tế và bảo vệ môi trường, chúng ta chọn nồng độ 20ppm thay cho nồng độ 100ppm.  Thí nghiệm tại khâu rửa dụng cụ bằng việc lắp đặt vòi phun nước áp lực và lưới chắn rác cũng cho thấy hiệu quả về kinh tế và bảo vệ môi trường.
