Abstract

Research on the main technology factors, such as thickeners concentration, hydrolyzed collagen concentration, and cold preservation time for mango-flavored fruit jelly supplemented with hydrolyzed collagen from tra catfish skin with the highest quality, was investigated. The results of the evaluation showed that agar at a concentration of 1.2% agar had good elasticity of 319 g, b*= 29.9, and the highest sensory score of 18.7 points. When combining with gelatin at a concentration of 0.6%, the product reached an appropriate elasticity of 318 g, b*=29.5, and the best sensory quality was 18.6 points. Hydrolyzed collagen at the concentration of 1% improved the antioxidant activity up to 81.9%, while maintaining the elasticity, color and the highest sensory score is 18.6 points. The product was packaged and stored at cold temperature (0-4℃) to still ensure quality and microbiological safety for 4 weeks.

Các yếu tố công nghệ chính như: nồng độ chất tạo đặc, nồng độ collagen thủy phân và thời gian bảo quản lạnh cho sản phẩm thạch trái cây vị xoài bổ sung collagen thủy phân từ da cá tra đã được nghiên cứu để có chất lượng tốt nhất. Kết quả đánh giá cho thấy nồng độ agar 1,2% cho sản phẩm thạch xoài có độ đàn hồi tốt 319 g, b*= 29,9 và điểm cảm quan cao nhất là 18,7 điểm. Khi kết hợp với gelatin ở nồng độ 0,6% sản phẩm đạt độ đàn hồi thích hợp 318 g, b*= 29,5 và chất lượng cảm quan tốt nhất là 18,6 điểm.  Collagen thủy phân với nồng độ 1% được bổ sung giúp gia tăng hoạt tính chống oxy hóa của sản phẩm lên 81,9%, đồng thời giúp duy trì độ đàn hồi, màu sắc và điểm cảm quan cao nhất là 18,6 điểm. Sản phẩm được bao gói, bảo quản ở điều kiện nhiệt độ lạnh (0-4℃) vẫn đảm bảo chất lượng và an toàn vi sinh trong 4 tuần.
