Abstract

To evaluate the applicability of kinetic models to the hot-air drying process of duck meat at four temperatures (70, 80, 90, and 100°C) over drying times of 1, 2, 3, 4, and 5 hours, Lewis, Page, Henderson - Pabis, and Logarithmic models were fitted to the experimental data. The results showed that the moisture ratio of duck meat decreased rapidly during the first hour of drying, and subsequently approached equilibrium after 4-5 hours at all temperature levels (oC). Among the tested models, the Logarithmic model provided the best fit to the experimental data, with R² values exceeding 0.999 and the lowest RMSE (<0.0008). The regression lines between predicted and experimental MR values were nearly superimposed, indicating the high reliability of the Logarithmic model in describing the drying kinetics of duck meat and its superior performance compared to the other three models. The optimal drying condition was identified as 90°C for 4 hours, which ensured a high drying rate and moisture equilibrium. These findings provide a scientific foundation for the application of kinetic models in optimizing poultry meat drying processes.
