Abstract

This study is aimed to determine the physicochemical properties of Da Xanh and Nam Roi pomelos collected in the Mekong Delta region of Vietnam, thereby establishing a basis for product diversification and valorization of these two varieties. The results highlighted the difference in morphology, chemical composition, and quality characteristics of these two varieties. Da Xanh pomelo has a larger fruit size and edible pulp than Nam Roi fruit. Da Xanh pomelo's juice has the highest TSS content and the most extensive TSS /TA index, corresponding to the highest food quality. In contrast, Nam Roi pomelo contains higher levels of vitamin C, total polyphenols, and flavonoids.

Tóm tắt

Mục tiêu của nghiên cứu là xác định tính chất hóa lý cơ bản của bưởi Da Xanh và bưởi Năm Roi, tạo cơ sở dữ liệu cho việc nghiên cứu, phát triển sản phẩm và nâng cao giá trị của hai giống bưởi này. Nghiên cứu đã ghi nhận được sự khác biệt cả về đặc điểm hình thái và thành phần hóa học, đặc tính chất lượng của hai giống bưởi. Kết quả nghiên cứu cho thấy bưởi Da Xanh có kích thước quả và hàm lượng thịt quả ăn được cao hơn bưởi Năm Roi. Bên cạnh đó, bưởi Da Xanh có hàm lượng chất khô hòa tan tổng số (TSS) cao nhất và chỉ số TSS/TA lớn nhất, tương ứng với chất lượng ăn cao nhất. Ngược lại, bưởi Năm Roi lại có hàm lượng vitamin C, polyphenol tổng số và flavonoid cao hơn.
