Abstract

This study aimed to develop and optimize a sustainable process for extracting carrageenan from the red seaweed Kappaphycus alvarezii using ultrasonic-assisted extraction (UAE). The effects of seaweed-to-solvent ratio (1:50, 1:100, 1:120 w/v), extraction temperature (40–80°C), and extraction time (30, 45, 60 min) were evaluated in terms of yield and Fourier Transform Infrared (FTIR) spectra. The highest yield of carrageenan (59.74 ± 8.15%) was achieved under UAE conditions of 60°C, 30 min, and a ratio of 1:100 (w/v). Besides, FTIR spectrum results confirmed the structure of carrageenan, and the ultrasonic-assisted method with optimal conditions was suitable for high-yield carrageenan extraction.
